Deep fried asparagus appetizer
=====
25 asparagus spears
3/4 cup all purpose flour

1/2 cup cornstarch

1-1/2 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp black pepper

1/2 white pepper

2 egg whites

2/3 cup cold beer
----
2 quarts of oil, (vegetable, corn, peanut, Safflower, canola)

1. Combine the dry ingredient in a bowl and mix.
2. Add the beer and eqq whites into the dry ingredients. (try to make the batter with in a half hour of the time you are going to cook the asparagus)
3. Heat up the oil between 350 to 375°F
4. Dip about 75% of the asparagus spear into the batter and fry for about 2 minutes.
5. Remove the deep fried asparagus from the oil onto a plate or cookie sheet lined with paper towels to soak up any excess oil.
The deep fried asparagus can be kept warm in the oven (140- 160 F) for up to an hour- but is best if served with in a half an hour of cooking)
