One of Sicily’s signature pasta dishes~
Pasta con le Sarde – pasta with sardines

Originating in Palermo Sicily, this dish is one of Sicily’s signature dishes. It is full of flavor, uses simple, healthy ingredients and is quick/easy to make. It just doesn’t get any better that this – here’s to a taste of Sicily. Enjoy
Ingredients:
• 6 – 7 TBSP Extra Virgin Olive Oil (EVOO) plus more for drizzle
• 1 clove of garlic, minced
• 1 chili pepper, or dry chili flakes (optional)
• 1 small onion, sliced thin (about ½ cup)
• ½ cup diced fennel bulb stems or fennel bulb
• ½ cup dry white wine
• ¼ cup raisins, soaked in water
• 1 can of sardines (125 grams or 4 – 4 1/2 oz) preferably packed in EVOO
• Zest from 1 lemon
• 1/8 cup to ¼ cup chopped parsley
• 1/8 cup to ¼ cup breadcrumbs
• 200 grams of pasta (preferably spaghetti)
• 1 cup of reserved pasta water
• Salt to taste
Process:
• Bring a pot of water to a boil and add 1 TBSP salt.
• In a separate large frying pan, add the EVOO and garlic – sauté for 30 – 60 seconds
• Add the chili pepper, onion and fennel – sauté for 3 minutes on med heat
• Add the wine and continue to cook for 2 – 3 minutes.
• Add the raisins and sardines – break the sardines up into small bits. Toss to coat.
• Cook 3 – 5 minutes
• Add your pasta to the pot of boiling water and cook time is as noted on the package of pasta
• Reserve 1 cup of pasta water, strain cooked pasta and add pasta to the frying pan and toss to coat with the sauce
• Add the lemon zest, parsley and breadcrumbs, along with some or all of the pasta water, as needed.
• Toss and serve - Enjoy
