Ivo’s Lentil and Mashed Potato
Ingredients
• 1 lb. – 1 ½ lbs. potatoes (typically 2 large or 3 medium potatoes) (use any potato) (russet is good, but any potato will do just fine), and as an alternative, use sweet potato.
• Pot of water for the potatoes
• 5 TBSP extra Virgin Olive Oil (EVOO)
• 1 garlic clove, minced
• 1 medium sweet onion, sliced thin, then diced (alternate, use any onion)
• 1 cup of red lentils, washed
• 3 cups of water for the lentils
• 2 TBSP butter (25 gm) (or vegan butter)
• ½ - 1 TSP Paprika
• Salt to taste
• Black pepper – optional
Process
1) Bring a pot of water to a boil, add your potatoes, with skin on, bring back to a boil and continue to boil for 30 minutes (meanwhile, start your lentils as noted below in point 3)
2) Remove potatoes from pot and let cool a bit, so you can remove the skin. Then mash your potatoes (I use a potato ricer and highly recommend using one). Add salt to taste and set aside.
3) Meanwhile, in a large pan, add the EVOO and the garlic, sauté for 30. Seconds, then add the onion. Mix and cook till the onions are soft and translucent.
4) Add the lentils, mix to coat, and cook for 2 minutes
5) Add 3 cups of water, stir, put lid on pan and bring to a boil. Once boiling, give it a stir, drop the heat to simmer, and continue to simmer with lid on, for 20 minimum, to 30 minutes (30 minutes preferred)
6) Then add the 2 TBSP butter and let it melt in with the lentils. Add salt to taste and add the paprika (and optional black pepper). Mix
7) Add your mashed potato to the lentils and mix thoroughly, ensuring an even consistency (note, if you still had some water in your lentil pan – and you most likely do – don’t worry as the mashed potato will absorb that water quickly, leaving a perfect consistency)
8) Serve hot and enjoy 😊
