Easy Sri Lankan Style Mutton Gravy Recipe

Ingredients:

500g mutton, cut into pieces
2 medium-sized onions, chopped
2 medium-sized tomatoes, chopped
1 small piece of ginger, minced
4 to 6 cloves of garlic, minced
2 small pieces of pandan/rampe (optional)
A few curry leaves
2 small pieces of cinnamon
2 cloves
1/2 to 1 1/2 teaspoons of cumin (seeragam)
1/2 teaspoon of Fennel (perum seeragam)
1/2 teaspoon of fenugreek
2 tablespoons of coconut oil
Fresh coriander leaves for garnish
1/2 teaspoon of turmeric
1 teaspoon of Sri Lankan style unroasted curry powder
1 teaspoon of Sri Lankan style roasted curry powder
1 to 11/2 teaspoons of chili powder
Small pieces of lemon or lime
1 or 2 green chilies
Salt to taste
Water, enough to cover the mutton for boiling

Instruction

step 1: Heat the pot on medium heat and add coconut oil.

Step 2: Add cinnamon stick, cloves, cumin seeds, fennel seeds, fenugreek seeds, pandan/rampe, and curry leaves to the pot. Sauté for 1 minute until fragrant.

Step 3: Add minced ginger and garlic. Stir for a while. Then add chopped onions and sauté for 2 minutes.

Step 4: Lower the heat, add the mutton pieces, and mix well. Then add salt, mix again, and cover the pot with a lid.

Step 5: After 15 minutes, open the lid, give it a good stir, and cover again.

Step 6: Once the water released from the mutton has evaporated, add turmeric powder and mix well. After a few minutes, add water to cover the mutton and let it simmer until the mutton is well cooked. Stir occasionally and add more water if necessary.

Step 7: When the mutton is half-cooked, add chopped tomatoes and cook until fully cooked.
Step 8: Add green chilies, chili powder, Sri Lankan style unroasted curry powder, and Sri Lankan style roasted curry powder. Mix well and simmer for 10 to 15 minutes.

Step 9: Adjust seasoning as needed. If the gravy is too thick, add a little water to achieve your desired consistency.

Step 10: Turn off the heat, squeeze a few drops of lemon, and garnish with coriander leaves before serving.
