Spicy Pepper Mutton Fry | Tender, Juicy & Full of Flavor | Easy Homemade Recipe!

Ingredients

For Cooking the Mutton:
500g mutton (bone-in or boneless, cut into pieces)

½ tsp turmeric powder

salt to taste
2½ to 3 cups water (add more if needed)
1–2 tsp lemon or lime juice
For Pepper Fry:
2 tbsp oil
1 small cinnamon stick (crushed)
2–3 cloves (crushed)
2 cardamoms (crushed)
¼ cup shallots (thinly sliced)
1 small green chili (chopped or slit)
1 sprig curry leaves
1 tsp minced ginger
2 tsp minced garlic (or garlic paste)
1½–2 tsp crushed black pepper (adjust to taste)
1 tsp red chili powder (optional, for extra spice)
1 tsp chili flakes (optional)
½–1 tsp cumin powder
1 tsp coriander powder
½ tsp garam masala
A pinch of nutmeg
Salt to taste
Fresh coriander leaves (for garnish)
½ tbsp butter (optional, for finishing)
A few drops of lemon juice (optional, for finishing)

📝 Instructions
1. Rinse the Mutton:
Wash the mutton pieces thoroughly under running water.
2. Marinate:
In a bowl, mix the mutton with salt, turmeric powder, and lemon or lime juice.
Let it marinate for 30 minutes to 1 hour.
3. Crush the Spices:
Using a mortar and pestle or a blender, crush the cinnamon stick, cloves, and cardamoms together.
Separately crush the black pepper and set aside.
4. Cook the Mutton:
In a deep pan or pot, add the marinated mutton and 2½ to 3 cups of water.
Cover with a lid and cook on medium heat until it starts boiling.
Once boiling, lower the heat to medium-low and cook covered.
Every 15–20 minutes, open the lid, stir, and check the water level.
If the water looks very low but the mutton is still not soft, add a little more hot water (½ cup at a time).
Cooking Time:
It usually takes 1½ to 2 hours for the mutton to become fully tender and juicy.
(When it breaks easily with a fork or spoon, it’s ready!)
5. Prepare the Pepper Fry:
Heat oil in a pan.
Add the crushed cinnamon, cloves, and cardamoms.
Add the sliced shallots, chopped green chili, and curry leaves. Fry until the shallots turn golden brown.
Add minced ginger and garlic. Sauté until the raw smell disappears.
Add the cooked mutton pieces (without too much stock) and fry on medium-high heat for a few minutes.
6. Spice It Up:
Add crushed black pepper, red chili powder, chili flakes (optional), cumin powder, coriander powder, and salt if needed.
Stir well and fry until the mutton is well-coated and starts becoming slightly dry.
If it looks too dry, you can sprinkle a few spoons of reserved mutton stock to keep it moist.
7. Finish:
Add garam masala and a pinch of nutmeg. Mix gently.
Turn off the heat.
Add ½ tbsp butter (optional) and mix for extra aroma.
Squeeze lemon juice if you like a slight tangy flavor.
Garnish with fresh coriander leaves.
8. Serve:
Serve hot as a starter or as a side dish with rice, roti, chapati, or even wrapped in a tortilla!
