Maple bear and deep fried sun chokes
We are 25 days into the Big Wild Year - 365 days of wild food cooking and eating only foraged foods. In this meal cooking episode I discuss some of our findings and give some updates on my health and nutrition so far. I'm fueling my maple syrup addiction by cooking bear meat and frying it with syrup and wild cranberries. My side dish is dried sunchoke chips soaked in hot water and then deep fried in raccoon fat.
