How to Braise 100% Grass Fed Beef (ButcherBox Premium Steak Tips | Braise)

CUT USED: ButcherBox’s 100% Grass Fed Stew Beef / Steak Tips

INGREDIENTS: Mirepoix - Vegetables for braising - celery, onions, carrots; Braising Liquid: Beef Broth; Salt and pepper, tomato paste

METHOD:
1. Make sure to pat dry the beef thoroughly and then season both sides with salt and pepper.
2. Chop up the vegetables for braising - carefully; The mirepoix is usually in the ratio of 2 Onions: 1 Celery: 1 Carrot.
3. Pre-heat the oven to 275F
4. Heat up a pan and add oil to it. When it starts smoking, sear both sides of the stew beef - 2 to 3 minutes per side.
In the same pan, add the mirepoix and sear them. Add the beef broth - the Braising liquid - and some tomato paste.
5. Place the beef back into the pan and add the rest of the braising liquid.
6. Let it simmer for a bit and then place the pan (covered) into the oven for about 90-120 minutes.
