Thai Bottom Round Roast with Coconut and Lemongrass (ButcherBox Bottom Round Roast | Sear; Roast)

Ingredients:
Bottom Round
-1 ButcherBox Bottom Round Roast
-½ head garlic (with peel)
-1 tsp fresh ginger
-1 Tbsp lemongrass
-2 Thai chilies, halved with seeds
-1 onion, roughly chopped
-1 can (13.5oz) coconut milk
-1 tsp cinnamon
-½ tsp black pepper
-1 Tbsp kosher salt
-1 Tbsp ghee

Rice
-2 c uncooked jasmine rice
-1 c coconut milk
-3 c water
-¼ c mirin or any neutral sweetener

Garnish (optional)
-1 lime
-1 bunch fresh cilantro, chopped
-1 bunch fresh Thai basil, chopped

Thai Coconut and Lemongrass Bottom Round Roast
Servings: 4 Prep: 10 min Cook: 4 hrs

Journey to Thailand for this one! Inspired by a recent trip to Bangkok, the complex nature of Thai herbs and spices really bring out the flavor of the Bottom Round cut. Paired with a fragrant, mildly sweet coconut rice, this dish will take you straight to Southeast Asia in no time.

Directions:
-Preheat oven to 300°F. Rub Bottom Round Roast with cinnamon, black pepper and kosher salt.
-Preheat Dutch oven, add ghee and sear roast on all sides, for 2-3 min per side.
-Add ginger, lemongrass, Thai chilies, onion and garlic. Lightly brown onion and garlic.
-Add coconut milk scrapping the bits off of the bottom of the Dutch oven.
-Remove from heat and place cover on Dutch oven.
-Place in oven and braise for 4-5 hrs or until meat is fork-tender.
-Mix rice, coconut milk and water and cook according to instructions on package. Once rice is done, let rest uncovered for at least 10 min, then fluff rice with rice paddle or fork.
-Serve roast over rice with squeeze of lime and chopped cilantro and basil.
