沙茶牛肉濕炒河粉 Beef Chow Fun with Satay Sauce
材料 (Ingredients):河粉2磅 (thick rice noodles 2 lb),牛肉5安士 (beef 5 oz),紅椒1/2個 (red bell pepper ½),青椒1/2個 (green bell pepper ½),洋蔥1/2個 (onion ½),菠蘿6粒 (pineapple 6 pieces)。
調味料 (Seasonings):沙茶醬2茶匙 (satay sauce 2 tsp),𧐢油2茶匙 (oyster sauce 2 tsp),鹽1/3茶匙 (salt 1/3 tsp),烹大師調味料1茶匙 (Hondashi 1 tsp),糖1茶匙 (sugar 1 tsp),老抽1茶匙 (dark soy sauce 1 tsp),牛骨湯1杯 (beef broth 1 cup)。
烹制方法 (Directions): 牛肉切片 (slice beef),用清水洗淨,抓乾水份 (rinse beef with water, pat dry),用食粉1/2茶匙 (add ½ tsp baking soda),鹽1/3茶匙 (add 1/3 tsp salt),生粉1茶匙 (corn starch 1 tsp),雞蛋1/2只拌勻 (add half an egg and mix),加入1茶匙生油備用 (add 1 tsp oil)。將紅椒,青椒,洋蔥切角片 (cut bell peppers and onion),菠蘿切碎粒拌入調味料在碗中備用 (chop pineapple and add to the sauce),另備1湯匙的生抽 (prepare 1 tbsp light soy sauce)。燒熱鑊,落油2杯 (heat 2 cups oil in wok),待油燒熱後,將牛肉走油 (fry the beef),倒在炸籬上,然後將河粉炒幾分鐘 (stir fry rice noodles),加入1湯匙生抽在河粉里炒勻上碟 (add 1 tbsp light soy sauce, remove from wok and plate),鑊中注入油1茶匙 (add 1 tsp oil),把洋蔥,紅椒,青椒略炒片刻 (add bell peppers and onion),倒入牛骨湯和調味料與牛肉煮滾後 (pour in the beef broth, sauce and beef),用生粉打芡 (add corn starch to thicken sauce),扒上炒好的河粉面上即成 (pour sauce over rice noodles)。
