• Beef Chilli Pulao
Ingredients:
Beef cubes 1/2 kg
Rice 1/2 kg
Green chilies (sliced lengthwise) 50 grams
Fried onions 1 cup
Crushed coriander seeds 1 tbsp
Crushed cumin seeds 1 tbsp
Crushed fennel seeds 1 tbsp
Chaat masala 2 tsp
Salt 2 tsp
Stock (yakhni) 2 glasses
Mint leaves 1 bunch
Fresh coriander 1 bunch
Mixed whole spices 1 tbsp
Ginger garlic paste 1 tbsp
Yogurt 1/4 kg
Oil 1/2 cup
Method:
Boil the rice and set them aside.
In a pot, add beef with water, salt, and ginger garlic paste. Boil until the meat is tender. Separate the beef pieces and stock (yakhni).
In a large pot, add the boiled beef pieces. Then add green chilies, mint, fresh coriander, all spices, yogurt, and fried onions. Mix well using your hands or a spoon for even coating.
Now layer the boiled rice on top, then pour the prepared stock over it.
Cover and cook on low heat (dum) for about 30 minutes. After that, gently mix everything.
Delicious Beef Chilli Pulao is ready to serve.
• Dahi wala Palak Gosht
Ingredients:
Goat meat 1/2 kg
Yogurt 1/2 kg
Onion 1
Spinach (palak) 1 kg
Fenugreek leaves (methi) 1 bunch
Green chilies 10
Turmeric powder 1 tsp
Salt 1 tsp
Ground coriander 1 tsp
Chopped garlic 1/2 tbsp
Clarified butter 1/4 kg
Method:
Wash and clean the goat meat thoroughly.
Heat Clarified butter in a pot and add chopped garlic. When it releases aroma, add the meat and onion. Sauté well until the onion turns golden brown.
Now add all the spices and cook well. Add yogurt and mix thoroughly, cooking it until the masala is well blended.
Add spinach and fenugreek leaves, then cook on low heat until the meat becomes tender and the greens are fully cooked.
Once done, sauté well again to enhance the flavor. Add finely chopped green chilies on top and let it simmer on low heat (dum) for about 5 minutes.
Turn off the stove. Your Dahi Wala Palak Gosht is ready to serve.
