From gooey brownies to spicy dumplings! 🍫🥟
In today’s episode of Fusion Food, Chef Saad brings two irresistible recipes that blend indulgence and flavor:

🍫 Cake Brownie – A fudgy, gooey delight that perfectly balances richness and sweetness.
🥟 Schezwan Dumplings – Juicy dumplings tossed in fiery Schezwan sauce for the ultimate Indo-Chinese kick.

Bihari Tasla Kabab
Ingredients:
• Beef fillets (Pasanday) – 700 g
• Yogurt – 250 grams
• Raw papaya – 2 tbsp
• Mustard oil – 4 tbsp
• Ginger garlic paste – 1 tbsp
• Fried onions – 1 cup
• Whole coriander seeds – 1 tbsp
• Cumin seeds – 2 tsp
• Black pepper – 1 tsp
• Nutmeg – 1 small piece
• Mace – 1/2 tsp
• Red chili powder – 2 tsp
• Turmeric powder – 1/2 tsp
• Salt – 1 tsp
• Charcoal – 1 piece
• Cooking oil – 1/2 cup
Method:
1. Dry roast the whole spices (coriander, cumin, black pepper, nutmeg, mace) on a griddle/pan and grind them into a fine powder.
2. Mix this ground spice into the yogurt and apply it to the beef fillets.
3. Add mustard oil, ginger garlic paste, fried onions, red chili powder, turmeric, and salt.
4. Add raw papaya paste and leave the mixture to marinate for half an hour.
5. Spread the marinated beef fillets in a flat pan (tasla), add cooking oil, cover, and cook on low heat until the meat is tender and the water dries.
6. Increase the heat and sauté until the oil separates.
7. Finally, give it a charcoal smoke for aroma and serve hot.

Moong Dal Zafrani (Saffron Moong Lentils)
Ingredients:
• Moong dal (split yellow lentils) – 1/2 kg
• Saffron – 1/2 tsp
• Milk – 1/2 cup
• Fresh cream – 1/2 cup
• Small green chilies – 1/2 cup
• Round red chilies – 4 pcs
• Salt – 1 tsp
• Turmeric powder – 1/2 tsp
• Garlic – 8 cloves
• Finely chopped ginger – 2 tbsp
• Cumin seeds – 1 tsp
• Ground hot spices – 1/2 tsp
• Oil – 1/2 cup
• Fresh coriander – as required
• Onion – as required
Method:
1. Boil water and add moong dal, round red chilies, green chilies, salt, turmeric, ginger, and onion. Cook on low heat until the lentils are soft.
2. Mash the cooked dal well.
3. Mix saffron into the milk, then combine it with the cream and stir this mixture into the dal.
4. Turn off the heat and prepare a tempering (tadka) with garlic and cumin in hot oil. Pour it over the dal.
5. Garnish with fresh coriander and serve hot.
