How to pick spicy chiles, the ones that are ripen fully “maduros”are guarantee to be spicy how you know ? well they will have lines and wrinkles yup they are like us too lol 😂 jk but the jalapeños that have lines, veins and are not as pretty those are spicy!!!!

Ingredients:
3 lbs chopped chicken
2 tbsp vinagre
2 tbsp olive oil
1/2 chopped onion
Chopped chipotle peppers in adobo sauce(the more the spicier)
3 minced garlic cloves
4 tsp garlic salt
2 tsp black pepper
2 tsp oregano
2 tsp ground cumin
2 tsp chipotle powder or NM
Jalapeño peppers, Anaheim, Hatch or Poblano peppers; rosted, peeled and cleaned
Queso Oaxaca or tour favorite melting cheese
