Aji de Gallina | Eating with Andy
Aji de Gallina is a traditional Peruvian dish of Chicken in a mild yellow chilli creamy sauce thickened with bread and ground nuts. Such a unique and delicious recipe that takes me back to Peru. This is comfort food at its best!
INGREDIENTS (Serves 4)
2 chicken breast
4 cups chicken stock
5 slices of white bread, without crust
1 tin evaporated milk
2 tbsp vegetable oil
1 small red onion or ½ large red onion, finely chopped
2 garlic cloves, minced
1 tsp cumin
1 tsp turmeric
½ cup mild yellow chilli paste *see TIPS below to adjust quantity according to brand used
¼ cup parmesan cheese, grated
¼ cup pecans, finely chopped
salt/pepper
To serve
4 boiled potatoes, sliced
2 boiled eggs, halved
1 cup long grain rice
4 black pitted olives, halved
Parsley
Sprinkle of finely chopped pecans
TIPS
- For the yellow chilli paste, I used the "Piki" brand which is mild (it isn't spicy at all). If you are using a different brand of paste, like Incas or Goya, they can be quite spicy. I would recommend using 1/4 of a cup to begin with. You can always add more at the end if you want it spicier.
