Bibingka is a classic Filipino delicacy that’s especially popular during Christmas season. It’s commonly enjoyed as breakfast or as a midday snack with a cup of coffee or hot chocolate

How to make special bibingka in the oven (filipino rice cake)

Yields: 8 medium size

Ingredients:
1 cup soaked rice grind with 1/2 cup water
1/2 cup glutinous flour
3/4 cup all purpose flour
3/4 cup sugar
1 and half tablespoons baking powder
2 eggs
2 tablespoons melted butter
200 ml coconut milk
1/4 cup whole milk or evap milk
1/4 teaspoon salt

Procedure:
1. In a bowl whisk all the ingredients until well combined
2. Bake at 350F preheated for first 15 minutes
3.Remove from the oven then top with sliced cheese and salted egg
4. Bake for another 10-15 minutes, then broil for 2-3 minutes
