Ingredients

Broth:
* 1 whole chicken
* 1 large onion, halved
* 1 large piece ginger, halved lengthwise
* 10 cups water
* 2–3 tbsp fish sauce
* 1–2 tbsp rock sugar
* Salt to taste

Spices (store-bought pho spice packet from Asian market)
* 1 pho spice packet (typically includes star anise, cinnamon, cloves, coriander, etc.)

Noodles & Garnish:
* Rice noodles
* Green onion, sliced
* Cilantro, chopped
* Thai basil
* Fried garlic oil

Instructions:
1. Char the onion and ginger
Char onion and ginger over an open flame or under a broiler until lightly blackened. This builds deep flavor in the broth.
2. Toast the spices
Heat a dry pan over medium heat and add the pho spice packet. Toast for about 5 minutes, stirring occasionally, until very fragrant.
3. Wrap spices in cheesecloth
Transfer the toasted spices into a cheesecloth bundle and tie it securely. This keeps the broth clean and easy to strain later.
4. Start the broth
In a large pot, add whole chicken, water, charred onion, ginger, and the spice bundle. Bring to a gentle boil, then lower to a simmer. Skim foam as needed for a clearer broth.
5. Season the broth
Add fish sauce and rock sugar. Simmer gently for 45–60 minutes, or until the chicken is fully cooked and tender.
6. Ice bath the chicken
Remove the chicken and place it into an ice bath for a few minutes to stop cooking and keep the meat juicy.
7. Shred the chicken
Once cooled slightly, shred or slice the chicken and set aside.
8. Strain the broth
