RECIPES:
DRESSING:
Toast 1/2 loaf of bread cut into squares. In another bowl beat 3 or 4 eggs. Add 1 tablespoon parsley, 1/2 teas. pepper, 1 cup diced celery, 1 cup diced carrots, 1 teas. chicken base, 1 teas. salt, 1 cup milk. Stir and add toasted bread. Add an additional cup of milk. For a thinner dressing, add more milk. Fry in butter until browned and chunky.

LEMON MERINGUE PIE:
1 9" baked pie crust 3 egg yolks
1 1/2 cups sugar 3 Tablespoons butter
1/2 cup plus 1 Tablespoon cornstarch 2 tsp. grated lemon peel
1 1/2 cups water 1/2 cup lemon juice
Heat oven to 400 degrees. Mix sugar and cornstarch in a medium sized saucepan. Gredually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute. Add egg yolks, one at a time and stir thoroughly. Remove from heat. Add butter, lemon juice and lemon peel. After mixing, pour into the pie shell. Heap the meringue (recipe below) onto the hot pie filling. Spread over the entire top, to the edge of the crust to prevent shrinking or weeping. Bake about 10 min or until a delicate brown. :) Cool away from draft.
MERINGUE:
3 egg whites (room temp) 6 Tablespoons sugar
1/4 tsp. cream of tartar 1/2 tsp vanilla
Beat egg whites and cream of tartar until foamy. Beat in sugar, one Tablespoon at a time. Beat until stiff and glossy. Do not underbeat. Add vanilla.

CHOCOLATE MOCHA PIE:
Soak 1 Tablespoon gelatine in 1/4 cup water. In a medium saucepan heat:
2 Tablespoons cocoa 1 1/4 cup milk
1/8 tsp salt 1 tsp instant coffee
3/4 cup sugar
Bring to boil. Remove from heat and add gelatine. Cool. When it starts to set, add 1 cup whipped cream, (or an 8 oz. cool whip) and1 tsp vanilla.Pour into a 9" baked pie shell. Add some grated chocolate over the top, if you wish.
