Cauliflower Potato Soup Recipe:
INGREDIENTS:
🥔 Half a yellow onion, diced
🥔 1 TBSP olive oil
🥔 1 head of cauliflower, chopped
🥔 1 lb russet potatoes, peeled and cubed
🥔 3 cups chicken broth (or vegetable broth)
🥔 1 TBSP butter
🥔 1 cup heavy whipping cream
🥔 1 cup shredded cheddar cheese
🥔 1/2 cup chopped green onions
🥔 1 tsp smoked paprika
🥔 salt + pepper to taste
RECIPE:
1. Heat olive oil in large pot over medium heat and add in chopped onions, sautéing for 5 minutes.
2. Add in cubed potatoes, chopped cauliflower, and broth. Turn up to high heat until it boils, then reduce to medium and cover for 25 minutes or until both potatoes and cauliflower are fully cooked.
3. Add in heavy whipping cream and pour mixture into a blender, blending until ingredients are smooth.
4. Pour mixture back into pot over low heat, adding in butter, seasonings and shredded cheese. Once melted, serve garnished with green onion.
