Dairy-Free Creamy Mushroom Soup
1 1/2 pounds of mushrooms
2 onions/shallots
4 cloves of garlic
4 tsp thyme
1 cup dry white wine
4 cups broth or stock
Oil
Salt and Pepper
1 cup coconut milk
Parsley to serve
