Persian/Iranian Katteh (Sticky Rice) برنج کته اصیل ایرانی

Persian (Iranian) Katteh is a sticky rice very similar to the white rice served in Asian restaurants. It is popular all over Iran but especially in the Caspian Sea coastal regions up north (in Guilan and Mazandaran provinces where the bulk of Iran's rice is produced). Katteh is stickier than the fluffier Chelow rice (that is served for more formal occasions) because the Katteh method does not include the washing of the starch out of the rice. This means the rice keeps all the nutrients and vitamins that are otherwise rinsed out. It is also quicker and easier to prepare. It's a favourite of mine and can be served with all stews (khoreshes) and kabobs.
