Side-shooting and training cordon tomatoes, cucumber, aubergine undercover

How to control summer growth of cordon plants (not ridge cucumber or bush tomato outside) in order to have healthy plants all summer, with large and easier-to-pick fruits over a long period, even without feeding. The strings are placed under plants' rootballs at planting time, new roots hold them in place. I do not give any feeds or fertilisers to these plants, only a 6-7cm (2.5-3in) compost mulch applied in May, which also feeds winter salads planted October after these summer crops https://www.youtube.com/watch?v=smC5qJMisLo .
