INGREDIENTS LIST
🌱 Vegan Sponge Cake
240 g (3.8 cups) wholegrain flour
240 g first-clear flour
21 g (4.3 tsp) baking powder
400 g (1.6 cups) plant milk
250 g (1.1 cups) brown sugar
60 g (0.5 cups) sunflower seed oil
Vanilla extract
🌱 For the coconut custard
500 g (2 cups) plant milk
200 g (0.9 cups) coconut milk
70 g (0.6 cups) cornstarch
100 g (0.5 cups) sugar
Vanilla extract
🌱 For the topping
½ cup shredded coconut
250 ml (1.1 cups) vegan whipped cream
🌱For the syrup to moisten the cake
200 g water
100 g sugar
Vanilla extract
