Hi, my name is Mizuki. I was born and raised in Kyoto. I have been running Hitotema since 2016.

My restaurant would be referred to as a Teishokuya which means we serve Japanese homestyle meals composed of small dishes.

My love of cooking came from my grandmother who taught me family recipes when I was growing up. I don't think I would be here if it wasn't for her.

In my 20's I lived in France and Spain for sometime and it was an eye-opening experience. I visited organic farmers and developed a passion for sustainable living and food production.

I try to use what I learned there here in my restaurant.

I actually get a lot of my ingredients from my family's organic farm. I get almost all of my ingredients from local suppliers as a way to support my community and my main purpose in running this restaurant is to serve local, fresh and seasonal food in a sustainable way.

With Teishoku-style dining, whether my customers are from down the street or from overseas, I want them to feel like they are eating a Japanese home-cooked meal.

We are located close to the Silver Pavilion and Philosopher's Path so stopping by here for lunch would fit in nicely to a visit to these beautiful sightseeing spots.
