MAKING THE MOST OF OUR SECOND LOCKDOWN -The Positano Diaries - EP 66

Here in Campania we are back in lockdown for a couple of weeks, hopefully no more. We make the most of the first week at home by winterising the garden, having a few four legged visitors and watching old videos from years ago. Skye gives us an update and Elisabeth and the girls are getting festive with Christmas shaped ravioli!

I made a kale and barley soup:
1 stick of celery
2 carrots
1 onion
1 potato
2 cloves of garlic
3/4 cup of barley
2 handfuls of kale
half a jar of cannellini beans (leftovers needed to be used, not necessery)
1 bay leat, 1 sage leaf, 1 sprig of thyme
1 litre of vegetable stock

Fry the celery, carrot and onion together in a pan for about 6-8 mins. Add all other ingredients except the kale. Cook for about half an hour and throw in the kale for the last 5 minutes. Serve with grated parmesan
