New Ways to make Dalgona Coffee | How to Drink

I know Dalgona Coffee seems to have already had its moment in the internet sun but trust me, this is worth checking out. I think.

Dalgona Coffee is this whipped coffee foam treat that's built using instant coffee and there's a really funny history to it that frankly @James Hoffmann does a better job talking about than I can, so I'll just refer you to his video on it here instead: https://youtu.be/WHmpgMsW-aA

But I do have two things to add to the conversation about Dalgona which... is an ongoing conversation, right? I hope so. First, I have a version of it that is actually a boozey dessert cocktail that comes out frankly, delicious. And then I've got this nonalcoholic version that uses whole beans instead of instant coffee that is maybe not 100% a complete recipe, but I think at this point I should just put it out there and see what other people can do with it.

For the Boozey Version, you'll want to make some Horchata first. Horchata is a traditional spiced and sweetened rice milk that's very popular in Mexico, though there are versions of it showing up all over the world.

Horchata
In blender combine:
1.25 cups -or- 244 g. rice
.5 cups -or- 100 g. sugar
2 cinnamon sticks
.5 cup -or- 50 g. hazelnuts or almonds
1 tsp vanilla extract
4 cups -or- 945 ml. water
and blend
let that sit for a few hours, or better yet overnight
and strain it and bottle it.

Boozey Dalgona Dessert
In bowl combine:
2 TBS white sugar
2 TBS Instant Coffee
2 TBS Coffee Liqueur
Whip to a thick foam
In glass:
Cracked ice
2 oz. -or- 60 ml. Horchata
1 oz. -or- 30 ml. rum
top with whipped coffee liquer

And finally, my nitro expressed whole bean version...
Nitro Espresso Dalgona Monstrosity
In isi Whipper combine:
12 grams of dark roast coffee, coarse grind
40 grams of white sugar
40 ml. water
Charge with nitrous 2 or 3 times while shaking between charges
in glass:
Crack ice
fill 2/3 with milk
Dispense, as best you are able, the coffee foam from the whipper
