Cómo hacer flor de marshmallow floreciente - How to make blooming marshmallow flower
Con la llegada del frío ¿Quién no disfruta de un buen chocolate a la taza? Es casi imposible decir que no. Pero si lo acompañamos de una flor de marshmallow floreciente, como poco, nos arrancará una sonrisa.
Hoy os dejo cómo hacer estas flores de marshmallow, que son creación de Dominique Ansel.
El caramelo, chuchería o gominola de malvavisco, a pesar de que pensemos que se trata de una creación más o menos reciente, se originó en el antiguo Egipto. Se trataba de un dulce elaborado con miel y espesado con savia de la planta MarshMallow, también conocida como malvavisco, altea, bismalva o hierba cañamera. Hasta mediados del siglo XIX, los dulces de malvavisco se elaboraban con la savia de la planta MarshMallow. A día de hoy, esta savia se reemplaza por gelatina, resultando la elaboración una mezcla de jarabe de maíz o azúcar, gelatina, goma arábiga y saborizantes.
Antes de la Primera Guerra Mundial, un hombre de Somerville, MA, llamado Archibald Query, lo fabricaba en su cocina y lo vendía de puerta en puerta, pero la escasez de azúcar en tiempos de guerra le obligó a cerrar. Cuando terminó la guerra, el Sr. Query ya disponía de otro trabajo y no estaba interesado en reiniciar su anterior negocio, pero estaba dispuesto a vender la fórmula.
Durkee y Mower reunieron sus ahorros y la compraron por quinientos dólares. Como acababan de regresar de Francia, rebautizaron su producto con el nombre de "Toot Sweet Marshmallow Fluff", pero el término "Toot Sweet" no permaneció durante mucho tiempo en la etiqueta. Today I'll show you how to make these marshmallow flowers, which are the creation of Dominique Ansel.
The marshmallow candy, despite the fact that we think it is a more or less recent creation, originated in ancient Egypt. It was a sweet made with honey and thickened with the sap of the Marshmallow plant, also known as marshmallow, altea, bismalva or hemp grass. Until the mid-19th century, marshmallow candies were made with the sap of the MarshMallow plant. Today, this sap is replaced by gelatin, resulting in a mixture of corn syrup or sugar, gelatin, gum arabic and flavorings.
Before World War I, a Somerville, MA, man named Archibald Query made it in his kitchen and sold it door to door, but wartime sugar shortages forced him to close. When the war ended, Mr. Query already had another job and was not interested in restarting his former business, but was willing to sell the formula.
Durkee and Mower pooled their savings and bought it for five hundred dollars. Since they had just returned from France, they renamed their product "Toot Sweet Marshmallow Fluff," but the term "Toot Sweet" did not remain on the label for long. When industrial sugar rationing ended in 1947, the company prepared for another expansion.
