How to Make Ginger Carrot Hot Sauce

Ginger and garlic! Throw in some hot peppers, cumin, and carrots...and it's amazing. Expand your hot sauce tool box with this delightful sauce.
The recipe:

In frying pan, saute:
1 1/2lb carrots
1oz fresh ginger
4oz garlic
4oz onion
When nearly complete, add:
1tsp cumin seeds
1tsp whole peppercorns

Add all ingredients to Instant Pot, including:
1lb pencil hot peppers (sub in your favourite peppers, if desired)
1 1/2lb yellow, orange, red bell peppers
4 cups 5% acetic acid white vinegar

Pressure cook on manual for 4 minutes, then release pressure. Blend completely in blender. Package in mason jars. Pasteurize via sous vide water bath at 150F for 2-3 hours. Let cool, then store in cool place. Refrigerate jars once opened. Enjoy!
