How to Make Sous Vide Citrus Bitters
Bitters are an integral addition to many cocktails, but they can be quite pricey! In this video, I demonstrate how to easily and inexpensively make bitters using vodka, fresh fruit, some spices, and a precision cooker - in just over two hours! Give this a whirl, and feel free to play around with the fruit/spicing to adapt for your preferred tastes. :)
The recipe:
4 ruby grapefruit
3 navel oranges
2 limes
2 lemons
Lightly zest fruit, taking care to minimize any pith collection
¼ cup dried black currants
Vanilla bean, split
Large piece cinnamon or cassia bark
10 cloves
1 full star anise
4 cups vodka
Place all above ingredients in zipper bag. Steep using precision cooker at 135F for two hours.
While that is steeping, make simple syrup using:
1 cup filtered water
Heaping ½ cup extra fine granulated sugar (such as berry sugar)
After two hours, strain fruit/spices through fine mesh strainer. Add simple syrup and stir well. Chill, package, and enjoy in your favourite cocktail!
