There are many types of compound chocolate (also called candy coating, coating chocolate, melting wafers, or non-tempering chocolate). I typically work with Mercken's, but have always wondered about the kinds that come in a bucket, often from higher end chocolate makers. What's inside? How can we use it? I show you everything on how I'd use it, plus a cost breakdown to see if it's practical/worthwhile to use for your home baking or baking business.
