Classic Red Beans and Rice ~ Noreen's Kitchen

Today I am revisiting a classic! Red beans and rice. Several years ago I did a video of how I make this dish, but the quality is really bad and we decided to start re doing several of the other videos to upgrade their quality. So today we do this!

I have some amazing smoked ham hocks that I purchased at the commissary and we are going to use those to flavor our red beans, but you could use a smoked turkey breast, a ham bone or even some smoked sausage if you like. That decision is up to you. Use what you have on hand.

I have soaked my beans overnight in cold water and then discarded the soaking liquid before cooking. I used chicken stock and rotel and tomatoes to season this dish as well as some aromatic veggies.

We have a beautiful warm meal at the end of the day. Make a big pot of rice (freeze the leftovers for another meal) and dip into this classic comfort food favorite!
