Homemade Frozen Breakfast Burritos ~ Noreen's Kitchen
Greetings! Today I am sharing with you how I make my own, homemade, frozen breakfast burritos. Rick and Molly both enjoy these, quick, on the go burritos that I fill with scrambled eggs, sliced sausage, bacon or ham and shredded cheddar cheese. These can be heated quickly in the microwave for a fast breakfast any day of the week.
When school is in session, Molly enjoys eating something hot and protein filled for breakfast, these burritos fit the bill. She will pair this with some fresh fruit or a smoothie, which we also make in bulk and keep in the fridge that way she can just pour herself a glass and sit down to a nutritious breakfast. Lately we have been enjoying tropical smoothies with a punch of kale for a boost of greens!
These are super simple and can be made when you are already planning to make breakfast. Simply make extra and when you are done, roll yourself some burritos to freeze. These reheat surprisingly well and I must say, if you can buy them in the store, why can't you make them at home?
The best part about this homemade version is that it does not have 50 ingredients in it! How hard can it be to put eggs, cheese and a bit of meat inside a tortilla? Of course you can choose to make your own tortillas, making these extra special. I love homemade tortillas, however on this day I did use a preferred brand of flour tortillas that are fairly decent.
I rolled up the burritos and placed them, not touching, on a baking sheet, lined with parchment, that I know will fit in my freezer! I placed the sheet in the freezer unwrapped and allowed them to freeze for at least two hours until they were solid. Then I wrapped them individually in sandwich bags.
I also like to cut strips of parchment and wrap the burritos up in the parchment before placing in the bags. Then you reheat them in the microwave with the parchment on them. This helps the burrito to stay soft and fresh. But you can just wrap the frozen burrito in a paper towel and heat it that way.
No matter how you mix these up and make them your own, they are going to be delicious. I hope you give these a try and I hope you love them!
