Vanilla Chia Pudding Parfait | The Buddhist Chef

A parfait wouldn’t be perfect without PRANA chocolate bark and a crunchy walnut topping. Finally, a dessert that you can enjoy at breakfast or as a snack! Pretty wonderful, huh?

PRANA Vanilla Pudding

Crumble:
1 cup rolled oats (100 g)
1/4 cup grated coconut, unsweetened (25 g)
1/4 cup chopped walnuts (25 g)
2 tablespoons melted coconut oil
2 tablespoons maple syrup
a pinch of salt

Pudding:
1 2/3 cup full fat canned coconut milk (400 ml)
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/4 cup whole chia seeds (65 g)
Chocolate barks for topping (100 g)

Preheat oven to 350F (175˚C)

In a bowl, combine the oatmeal, grated coconut, walnuts, coconut oil, maple syrup and salt.
Place on a baking sheet and bake for 15 minutes.

In a bowl, combine the coconut milk, the maple syrup, the vanilla extract and chia seeds.
Mix well and refrigerate for at least 60 minutes.

Pour the pudding into dessert cups, garnish with crumble and chocolate barks.
