Dawn's Dish Pat and Tim of Taco In A Bag

Have you ever grabbed a bag of chips and threw your own toppings in to create your own nachos?

Well, that's the concept behind a new restaurant created by two Chicago men that is pulling people in faster than you can say, “taco.”

On this week's Dawn's Dish, FOX 32 features 'Taco In A Bag.'

It's in the heart of Lincoln Square, where a square bag with chips inside is all the rage. The concept was cooked up by two Chicagoans, who happen to be professional eaters.

"Patrick and I have known each other for 15 years now - and we met on the competitive Eating Circuit," said Tim Brown.

Pat "Deep Dish" Bertoletti and Tim "Gravy" Brown were contracted stars on the major league Eating Circuit for more than a decade, and they made good money doing it.

"He made his living off of it. I just did it as a hobby. It was an interesting way to see the country," Brown said.

They ate their way through Nathan's Famous Hot Dog Eating Contest a combined 18 times. They took part in so many contests that Tim was ranked number 10 and Pat number 2 in the world among competitive eaters.

"As time went on, I realized I couldn't beat him, so I might as well join up with him," Brown added.

So Bertoletti, a culinary graduate, helped create the menu that they first served on their Chicago food truck called "Glutton Force Five".

But it's their eat-it-while-you-walk "Taco In A Bag" that took off running.

"It's a cool idea. You eat everything all at once. It's like nachos almost," Bertoletti said.
