Magdoos (stuffed and pickled eggplant)
Prep time: 30 minutes (one week wait time)

Ingredients:
•1 kilo small eggplants
•1 red bell pepper, finely chopped
•1 cup ground walnuts
•3 cloves of garlic, minced
•Salt and olive oil to taste
Directions:
•Cut off the necks of the eggplants then boil in water with salt for about 15 minutes until soft.
•Gently squeeze the eggplants and drain the water.
•Mix the walnuts with the bell pepper and garlic then add a pinch of salt.
•Make a small cut in the middle of the eggplants and add a pinch of salt to each one then leave to drain for about a day.
•Stuff the eggplants with the walnut mixture and place in a jar, immerse in olive oil, cover, and leave for a week to be pickled before serving.

Ingredients:
For the dough:
•2 1/2 cups AP flour
•1 cup powdered sugar
•1 cup corn starch
•1/2 teaspoon baking powder
•2 eggs
•200 grams unsalted butter
For the caramel:
•1 can condensed milk
Directions:
•Boil the closed can of condensed milk as it is with 2 slices of lemon in a pressure cooker for half an hour to create caramel.
•Mix the sugar and the butter in a bowl then mix in the eggs.
•In a separate bowl mix the flour, the cornstarch and the baking powder then add it to the other mixture.
•Combine well and put in a plastic bag and refrigerate for an hour.
•Cut into squares and shape into round balls then cook in a pan for 5 minutes (cookie pans or similar tools might be helpful to maintain shape).
•Pour the caramel into a piping bag and fill in one half of the dough.
•Seal the two halves together by applying some caramel to the inner edges.
