ITALIAN GRILLED CHICKEN SUB with Broccoli Rabe, Red Roasted Peppers, and Fresh Mozzarella
Today we're making a juicy marinated Italian chicken sandwich with broccoli rabe, red roasted peppers, and fresh mozzarella. The key to a moist and flavorful chicken sandwich is all in the marinade. By marinating the chicken breasts for at least 4 hours, (save some of the unused marinade to top the sandwich} you'll have a juicy chicken sandwich even with using plain old chicken breasts. Alternatively use boneless skinless chicken thighs for an even juicer sandwich! I hope you enjoy this Italian chicken sub with garlic broccoli rabe, fresh mozzarella, and red roasted peppers!

INGREDIENTS
- For the sandwich
- 1 pound chicken cutlets - thin sliced
- 2 hero/sub/hoagie rolls
- 1/2 pound plus red roasted peppers - use as many as you want
- 1/4 pound fresh mozzarella - sliced
- 2 cups sauteed broccoli rabe - broccoli rabe recipe linked above.
- For the marinade (reserve 1/4 for topping the sandwich)
- 2 teaspoons garlic paste
- 3 tablespoons Pecorino Romano cheese - grated
- 2 tablespoons fresh parsley
- 1/2 teaspoon dry oregano
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
INSTRUCTIONS
1. Marinate the chicken for at least 4 hours
2. Saute broccoli rabe in garlic and olive oil.
3. Pat dry chicken before searing. Sear chicken until just done in a pan over medium-high heat or grill for 2-3 minutes per side.
4. Place chicken in a pan or you can place straight in the hero roll (if placing in roll be careful to not burn edges of roll). Top chicken with broccoli rabe and 1 layer of fresh mozzarella slices. Broil for 2-3 minutes until the cheese melts.
5. Place the chicken, broccoli rabe, and melted mozzarella in the hero roll and top with the extra unused marinade and red roasted peppers. Enjoy!
