Simple to make DELICIOUS MUSHROOM RISOTTO!

Ingredients:
1/2 cup grated Parmesan cheese
2 Tbsp Chives or Fresh Parsely
6 cups chicken broth, or as needed
3 tablespoons olive oil
1 pound portobello mushrooms, sliced (Here ai am also a gourmet blend that includes Oyster and Shiitake)
1 medium onions, diced
1 cup Risotto rice of your choice (Carnaroli)
½ cup dry white wine
3 tablespoons butter
2 fresh thyme stems
Salt
Freshly ground black pepper to taste

Directions:
Heat the chicken broth in a saucepan over low to medium heat and keep it warm throughout the preparation. You may add some water if you need more broth.
Meanwhile, warm 2 tablespoons olive oil and 1 tablespoon of butter in a large saucepan over medium-high heat.
Add the mushrooms and the thyme. cook and stir until soft, about 3 minutes. Remove mushrooms and their liquid to a bowl; set aside.
Add remaining 1 tablespoon each of olive oil and butter to the saucepan. Stir in onions and cook for 1 minute.
Add rice; cook and stir until rice is coated with oil and pale, golden in color, about 2 minutes.
Pour in wine, stirring constantly until wine is fully absorbed.
Add 1/2 cup warm broth to the rice, and stir until the broth is absorbed.
Continue adding broth, 1/2 cup at a time, stirring every 30 seconds, until the liquid is absorbed and the rice is tender, yet firm to the bite, about 15 to 20 minutes.
Remove from heat.
Add the reserved mushrooms and their liquid, butter, parseley, and Parmesan cheese.
Season with salt and pepper and serve immediately.
