How to Make Healthy Zucchini Muffins

Get a great dose of fiber in these muffins! Great for breakfast! Replace regular sugar with maple syrup for regular muffins!!
Top muffins with oats or chunky sugar!
Ingredients:
1 2/3 cups whole-wheat flour (or all-purpose)
½ c. maple syrup or sweetener of your choice
1 t. baking powder
½ c. milk
1 t. baking soda
¼ c. melted coconut oil (or butter)
1 t. ground cinnamon
1 t. vanilla extract
½ t. salt
1 ½ c. grated fresh zucchini
1 egg
1/3 c. old-fashioned oats (uncooked)
Directions:
1. Heat oven to 350 degrees. Prepare a 12-cup muffin pan by either greasing it with cooking spray or lining the cups with paper liners. Set aside.
2. In a large mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt until combined. Set aside.
3. In a separate mixing bowl, whisk together egg, maple syrup, milk, coconut oil and vanilla until combined. Pour this mixture into the dry ingredient mixture, and stir with a spoon until just combined. The zucchini will loosen the batter once it is added.
4. Stir in the zucchini and oats until just combined. Portion the batter evenly between 12 baking cups. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 5 – 10 minutes on a cooling rack.
