Chef Chris Ward has partnered once again with Chef Roger Man to introduce a sushi program within his Preston Hollow restaurant. Sushi at The Mercury, the remodeled private dining space previously known as The Side Bar, is an energetic and welcomed departure from the otherwise sleek and dim dining room. “Sushi has always been a passion of mine and I'm thrilled to partner with Chef Roger once again,” describes Chef Ward. The two previously worked together at Chef Ward's Euro-Asian bistro, Citizen, formerly located on Oak Lawn Avenue in Dallas. The restaurant featured sushi alongside Chinese-inspired European cuisine, an intriguing and creative combination. Chef Man was Chef Ward’s first Sushi Chef at Citizen and they have maintained the relationship since. Chef Man has served as guest chef at The Mercury throughout the years, delivering delicately prepared sushi and sashimi to guests — a contrast to the celebrated rich and earthy menu at the restaurant. Though The Mercury currently features a sashimi appetizer and other dishes with Asian influence on the menu, Sushi at The Mercury provides guests with a variety of traditional sushi and rolls with Chef Man’s experience and creativity as the driving force behind his ultramodern seared or cold sashimi dishes. Over 25 years, Chef Man has had the opportunity to prepare exquisitely decorated sushi in Hawaii as well as some of Dallas’ best, including Deep Sushi, Citizen and the world-renowned Nobu, where he spent the last 10 years creating a name for himself and his culinary innovation. Chef Man encourages guests to customize their orders, “Just tell me what you want or what you like and I'll create something unique for you.”
