081 Pizzeria's Diavola 3.0 has got the hots for London Pizza Festival

For Version 3 of his Diavola pizza, Andrea Asciuti of 081 Pizzeria in London's Peckham employs three sources of heat: 'Nduja sausage and Spianata Salami are cooked together to form a cream sauce, while Scotch bonnet chillis are deep-fried and then layered whole over melted fior di latte mozzarella and grated Parmesan, one to a quarter-slice. Extra virgin olive oil is the finisher that spreads the heat - and the joy.
