Hey Bro, your Margherita is a gamechanger
Years ago I had this fantasy: A young pizzaiolo from a Neapolitan pizza family would take a fresh new look at the "ruota di carro", the old-school pizza shaped with an old-fashioned stretching technique in which the dough is pulled and pinched over the surface of the peel to create a very thin, enlarged, irregularly shaped pizza surface. The basic techniques behind this so-called "wagon wheel" pizza would be traditional, but every ingredient, every element, every turn would be reconsidered.
That fantasy has been realised with the Margherita crafted by Ciro Tutino at Bros Pizzeria, a modern and very classy pizzeria beside the historic Piazza Mercato in Naples. It is an exceptional, game-changing pizza - precisely because it's very traditional.
