Sriracha Snack Sticks | Homemade Sausage | Smoked Sausage Charcuterie

Snack sticks, little smokies, deer smokies, they go by many names. I say call these smoked sausage sticks what you want. Just remember to call me when they are ready. If you have watched my channel much you know I really enjoy making homemade smoked sausage, especially with deer meat/venison, wild hog, or any wild game sausage. I also enjoy making deer jerky, guess I need to post up the next time I make some. In this charcuterie lesson, I showed my students how to make an excellent deer sausage using some Sriracha Dirty Bird from Kosmo Q and some common ingredients from their local store. You can use these homemade sausage links on a charcuterie board or just as a quick snack. You can smoke them in an electric smoker, pellet smoker, or your pit smoker. Heck, I even smoke sausages in my UDS. check out the sriracha or sriracha, hod to put that misspelling in here since so many people spell it that way. 10lbs Venison
3lbs Pork Fat
1.5lbs High heat cheese
8-10 Jalapenos
1/2cup Minced Garlic
1/4cup Kosher Salt
3tsp curing salt, Use the manufacturer recomandations
1/2cup Sriracha Dirty Bird / Available at Kosmo Q
2 1/2cups Ice Water
2 3/4oz Encapsulated Citric Acid (4oz per 25lbs)
