Filipino Spring Roll (Filipino Lumpia)

Ingredients:

Ground pork 1 lbs. 14 oz (858g)
Water chestnuts drained chopped 230g (8 oz.)
Bamboo shoots drained chopped 227g (8oz.)
Mushroom chopped 79g (1cup)
227g (8oz.)
Carrots 1 each 110g ( 1 cup)
Shallots 1 each 36g (3 Tblspn)
Eggs 1 each
Garlic 2 cloves chopped 10g
Ginger chopped minced 23g (2 Tblspn)
Salt 7g (1 1/2 tspn)
Black pepper 3g (1 tspn)
Sesame oil 5g (2 tspn)

Canola oil for frying: 824g (4 cups)
2 bags of spring roll wrapper
Whole eggs 2 - used to sealed the wrapper
Sauce:

Vinegar 62g (1/4 cup)
Thai chili 1 each
Shallots 21g (1/2) of shallots chopped
Sesame chili oil 1/2 tspn.
