Chicken Kabsa. Mapishi ya Chicken kabsa
Fellow rice lovers! If you love having rice during the month of Ramadan, just like me. Trust me, this fragrant and fluffy rice, aromatic spice, and juicy chicken kabsa has to be added to your iftar list 🍽
Taking you straight to the MiEast, let's get started.
Basmati rice (3-4 cups)
4 pcs of chicken
For the spice mix
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp dried ginger or ginger powder
1 tsp garlic and ginger powder
1 tsp cinnamon powder
1 tsp cayenne paper powder
3-4 black cardamom ( full spoon)
1 tsp green cardamom pods
1 tsp turmeric powder
1 tsp black pepper powder
1 tsp dried cloves
1 tsp ground nutmeg
Other ingredients in the recipe section.
Blend everything to get a thin powder.
Marinate your skinless chicken with salt, garlic and ginger paste, lemon juice, and 1 tbsp of your kabsa spice mix. Keep it aside.
In a pot,
Add oil and fry chopped onion and then add grated carrot. Add about 1 cup of grated fresh tomatoes plus a bit of salt to make the tomatoes cook easily.
Add kabsa spice mix (about 2 tablespoons), 1 dry black lime, and 2 tablespoons of tomato puree. Let it cook on a low to medium heat and then add 2 cups of water.
Add chicken and continue cooking on a low heat for another 5 to 7 minutes (keep the heat low) transfer the chicken into the tray, and bake until the chicken is cooked through.
Meanwhile, add dried fruits of your choice into the pot (I soaked mine for 5 minutes)
Add soaked and drained rice and then enough water to cook your rice.
Use 2 cups of water for every 1 cup of rice (this is just for the guidance)
Here is your last opportunity to add anything you wish to add, more salt? spice mix? Cook on a low heat until the rice is done. Cover on a low heat until fluffy.
Now, once the chicken is done, frying it is optional but recommended if you like it a bit crisp and want to give it a golden colour.
Ready to serve!
Do you have any sauce left in your try after baking the chicken? Cook it for a few seconds or a minute to make it thicker and pour it on top of your kabsa.
