Banh Xeo with my Ba Ngoai (Traditional Vietnamese Pancake)
Try this delicious, simple and easy traditional Vietnamese, savoury pancake.
This is a very special episode for me as I get to learn the tricks of the trade to making perfect Banh Xeo from my amazing Ba Ngoai. She is hands down, one of the best cooks that I know. In this video, she speaks a mix of Vietnamese(which I translate into English for you, just turn on the captions/subtitles) and English. Hope you enjoy watching!
This recipe feeds up to 10 people.
You'll Need:
• 2.2L Soda
• 1Kg Rice Flour
• 400ml Coconut Cream
• 1 Tbsp Turmeric Powder
• 500g Pork Belly
• Shrimp (optional)
• 2 Large Onions
• Bunch of Bean Sprouts
• Bunch of Asian Herbs
• Oil, for frying
Method:
1) Prepare your onion, pork belly and shrimp by finely slicing each ingredient.
2) To make the Banh Xeo batter, place rice flour, turmeric powder and soda water in a large bowl or pot.
3) Stir to combine and ensure all the dry ingredients have combined.
4) Add in the coconut cream and chopped shallots and mix.
5) Heat your pan to a high heat and sautee a bit of pork, onion and shrimp until evenly cooked.
6) Next add in a ladle of batter and place bean sprouts on one half of the pancake.
7) Once the pan is coated in the batter, turn the heat down and place a lid on the pan and cook for 2 mins and 30 secs or until cooked (time varies depending on heat of your stove).
8) Using a spatula, fold the banh xeo in half and place on a plate.
9) Bon Appétit!
Enjoy Banh Xeo with fresh Asian herbs such as Perilla leaves and Vietnamese mint and dip in Nuoc Mam Cham (Vietnamese dipping sauce). You can also eat Banh Xeo by wrapping it in rice paper with herbs and dipping in Nuoc Mam Cham or simply by eating it on its own.
P.S. My grandpa makes a cameo, see if you can spot him.. haha
