Healthy PCOS Breakfast Recipe--Low Carb, Grain Free, Gluten Free, Dairy Free, Paleo

Sharing what I eat for breakfast sometimes for PCOS: paleo coconut pancakes! These are gluten and grain free, dairy free, refined sugar free and a good low carb breakfast option for those of us with PCOS.

I like to make it once a week when I want to switch things up and not have eggs every morning.

Recipe makes 4 pancakes (serves 2)

2 eggs
1/8 cup coconut flour
1/8 cup tapioca starch
1/4 cup coconut milk
1 tbsp shredded coconut (optional, if you love coconut like me)
1 tbsp honey (optional, if you want a little sweetness)
small dash of salt

**optional additions: blueberries, sesame seeds, other nuts, 1/2 tsp vanilla extract, a little baking soda if you want fluffier pancakes.

Instructions:
1. Beat eggs in a medium mixing bowl, then add the rest of your ingredients one by one. Mix until smooth.
2. Heat a little coconut oil in a pan on medium heat, and pour in 1/4 of the batter when hot.
3. Cover with a lid, turn to low, and once the pancake looks solid on top, flip it. Takes a few minutes depending on the heat of the pan and the thickness of the pancake.
4. After another 30 seconds, remove the pancake. Repeat with the next 1/4 of batter.
