Tomato Soup Recipe
Ingredients
- 1 14oz can of full-fat coconut milk
- 1 28 oz can of tomatoes
- 1 tsp garlic powder
- 1/2 onion (diced)
- 2 tsp Italian seasoning
- salt + pepper to taste
- 1/2 cup cashews (soaked in hot water for 20 minutes)
**I didn't have fresh basil but that would be lovely in the soup!!!

Method
1. Bring a large pot to high heat and coat the bottom of the pan with olive oil. Add in the diced onion and cook until translucent (about 5-7 minutes). Add the remainder of the ingredients (excluding the cashews) and bring to a boil.
2. Once the mixture is boiling, reduce to medium heat and let simmer for about 15-20 minutes.
3. After 20 minutes have gone by, add the soaked cashews to a high-speed blender or food processor in addition to the soup mixture. Blend until all is well combined.
4. Transfer the mixture back to the pot and let it simmer for another 5-10 minutes before serving.
