오늘은 메주콩으로 청국장을 띄웁니다 (This video shows me making Chunggukjang)
재료는 많이 안들어갑니다 (This method is a simple and easy way, but you will need a cup of water from washing your rice. The best water is from the second rice washing.)
콩을 10시간이상 불려줍니다 (Soak your soya beans for 10 hours)
졸이질도 합니다 (Sift your beans so any loose rocks, dirt is washed away)
압력밥솥에 콩은 3컵인데 (Put the 3 cups of soaked soya beans in a pressure cooker)
물은 4컵정도 자작하게 넣어 끓인후 (For any 1 cup of soaked beans, put 1 1/3 cup water in cooker. For this video, I used 4 cups of water for 3 cups of soaked beans. Water doesn't need to be precise, but submerges the beans nicely.)
추가 흔들리면 중불로 20분간 끓인후 (Boil on high heat, when the pressure nossle begins to make a small sound, reduce heat to low-medium for 20 minutes)
불을끄고 20분간 뜸을 들입니다 (After 20 min, turn off heat and keep lid on pressure cooker until all the steam is released slowly from the nossle. Open lid after steam is released, and pour beans into a strainer to remove any excess water. Once it is fully drained, keep you beans in the strainer and replace the draining bowl. If is best if you use reserved water from rice washing. Once you have 1 cup of reserved water from rice washing, pour this into drained beans to help activate the fermentation. After pouring the water, cover with a wet kitchen cloth. Wrap in other kitchen cloths or blankets. )
전기장판 40도에서 24시간 띄웁니다 (Find an area is that 40C. I use my heating bed and place the beans on top for 24 - 48 hours, under blankets as well. If you don't have a heating blanket or bed, find a warm area or create one using a small heating fan/source)
(After 24 hour, check your beans to see if the fermentation has begun. You should see it become sticky and strands appear when you mix it around. If no strands has formed, keep it under heat for another 24 hours. Check again for strands halfway through.)
말려서 가루로 만들어 사용하세요 (Another method of eating, you can dehydrate the fermented beans and grind it into a powder in your blender -- eating 1 tbsp of powder with any food or yogurt, is a great way to get your fiber and help your digestion)
맛있는 청국장 끓여드세요 (You can also make it into a stew -- enjoy!)
