Sukto-A mouthwatering delicacy having a perfect blend of nutrition and tradition
Right from the paddy fields and richness of Bengal, I am sharing my version of its (one of the) most favourite delicacies.
Recipe of Sukto-
I .Take Mustard seeds{sarso}(1/2 tbsp), Poppy Seeds{posto/khas khas}(1/2 tbsp), Fennel Seeds{mouri/sauf}(1 tbsp), Ginger -1.5 inch, Green chillies-3-4(according to your spice tolerance)- Soak them in watet for 10/15 mins and make a fine watery paste.
II. Cut down multiple vegetables, bitter gourd and drumstick must and marinate the bitter gourd and brinjal with tumeric powder and salt.
III. Dry roast mustard seed, poppy seed, 5spice blend (panch foron),whole dry red chili, bay leaves-1:1:1:1:1:1 ratio and grind it into a coarse blend.
IV. Fry some badis, bitter gourd, brinjal separately.
V. Take some oil in a pan, add 2-3 bay leaves, 1:1 mustard seeds and methi, whole red chilli, let them crackle, add the veggies one after the other, cover and cook. Add the spices, water, the paste from step (I) , milk and cover and cook till the veggies gets tender. Add the fried bitter gourd, some ghee, badis.and lastly the coarse spice blend from step(III).
Voilaaaa. It's Time to enjoy this Cultural heritage and supreme delicacies from the land of Bengal.
Team it up with steamed rice and green chillies (for the kick 😉).
