How to make a Fluffy Baked Silken Tofu Cheesecake encased in Cinamon Crostata. 100% plant-based
A NEW WAY TO BAKE FLUFFY BAKED CINNAMOND CHEESECAKE
This is a soft and tender crostata pastry that utilises some baking powder for a soft puff. It is somewhere in between a tender cake and shortbread and is the perfect wrap around pastry for my version of a baked cheesecake inspired by Pasticceria Papa’s ricotta cheesecake from Sydney. I have added some additional candied citrus peel, but feel free to leave it out! If this is a cheesecake you want to enjoy on the same day, omit the top, but for a truly decadent eat, prepare the day before, and ‘age’ it in the refrigerator overnight. This will soften the pastry allowing for some moisture migration from the filling to the crust. Dust with plenty of icing (confectioners’) sugar and extra cinnamon.

- caster (superfine) sugar
- vanilla bean paste
- cornflour (cornstarch)
- plain (all-purpose) flour, plus extra for dusting
- baking powder
- fresh whipping cream
- candied citrus peel, diced (optional)
