紅燒豆腐 Braised Tofu
材料:
雞蛋豆腐1.5盒、五花肉片50公克、乾香菇40公克、紅蘿蔔15公克、甜豆莢50公克、蔥段1支、蒜片2顆、太白粉水1大匙、香油1大匙、水5大匙
Ingredients:
1 1/2 box of egg tofu, 50 grams of sliced pork, 40 grams dried shiitake mushrooms, 15 grams carrots, 50 grams sweet peas in the pods, a length of green onion, 2 cloves of sliced garlic, 1 tablespoon corn starch, 1 tablespoon sesame oil, and 5 tablespoons of water.
調味料:
醬油2大匙、胡椒粉少許、細糖1小匙
Seasoning:
2 tablespoons soy sauce, a little ground pepper, 1 teaspoon of finely granulated sugar.
作法
1.乾香菇泡發切片;紅蘿蔔洗淨去皮切片;甜豆莢去粗絲切段;雞蛋豆腐切塊,備用。
2.熱油鍋油溫約160度,將作法1的雞蛋豆腐放入鍋中,炸至金黃後撈起瀝油。
3.熱鍋加入適量沙拉油,爆香五花肉片,再放入作法1的乾香菇片、紅蘿蔔片與蔥段、蒜片一起爆香。
4.作法3的材料炒香後,放入炸好的雞蛋豆腐、醬油、水略燒煮,再加入胡椒粉、細糖,蓋上鍋蓋悶煮約30秒,再放入甜豆莢拌炒,以太白粉水勾芡後淋上香油即可。
Preparation Method
1. Soak the dried mushroom slices; wash, peel and slice the carrots; pull the strings from the pea pods; cut the egg tofu into cubes and set all this aside.
2. Heat up a deep fry pan to 160 degrees C. Take the egg tofu cubes from step 1, place in the pan and deep fry until golden brown. Afterwards take them out and let drain.
3. Add a suitable amount of salad oil to a frying pan and saute the pork slices, then add the dried mushrooms, the materials from step 1, carrots, green onion and garlic slices and stir fry together.
4. While stir frying the material from step 3, add in the fried egg tofu, soy sauce, a little water, then the pepper, fine sugar and cook for about 30 seconds, then add the pea pods. Afterwards add cornstarch and fry it to thicken the water and finish by topping it with sesame oil.
