Healthy Egg Plant Parmesan Recipe

This healthier version of Eggplant Parmesan is delicious. Give it a try and let us know what you think.

Ingredients
¾ cup bread crumbs
2 T. grated parmesan cheese
2 t. dried oregano
2 eggs
2 medium eggplants, peeled & cut crosswise into 1/4” slices, about 2 lbs.
1 ¾ c. tomato and basil sauce
1 c. shredded mozzarella cheese

Directions
Preheat oven to 400 degrees
In a shallow dish combine bread crumbs, parmesan cheese, and oregano.
In a second shallow dish, beat the eggs with two tablespoons of water.
Tragedy eggplant slices in the egg mixture, then in the bread crumbs. Place on a baking sheet and bake
20 to 30 minutes turning once until browned. Allowed to cool slightly
Spread ¾ cup of the sauce on the bottom of a 9 by 9 casserole dish spray the dish with Pam. Arrange half
of the eggplant on the sauce and cover with half a cup sauce and half a cup mozzarella cheese. Repeat.

Cover and bake for 35 minutes take the cover off and bake an additional 15 minutes.
